Converting a Water Tank to a Holding Tank

Hello all,

My Gulfstar has two 40-gallon water tanks but no hoding tank for sewage. I plan on adding a large water tank in the aft cabin when I convert to a centerline queen bed.

My question is: Can I convert one of the water tanks to a holding tank and dedicate the other water tank to a dedicated water supply for the head? I would use the new water tank under the bed to supply water for the remainder of the boat.

I wish I didn't have to but my boat doesn't have any holding tanks (the old heads dump directly overboard so i can't use them) and I want to install a new head and make it legal.

What is the tank made of? not sure i would do it with a metal tank, waste has a lot of acids in it and can cause corrosion problems. I have seen aluminum used but plastic would be best.
