If the deck is big enough to contain it. What would be the difference between a dinghy or HobieCat - Basically none so long as the mast is kept down.

My biggest question was how would you lift a hobie cat? Some sort of sling?

Same way you would lift the dinghy off the deck - with a crane and sling. The HobieCat can have a sling attached to the inside cross beams between the pontoons. Arranging a way to install and lift the mast while afloat would take some creativity but should not be overly difficult.
