Opinions on this water egress idea

Looking to verify if this idea will pass inspection or do you see any problems with this set up. The idea is to be able to divert my shower/gray water out the thru hull OR choose to divert into gray water tank. I like for this to happen right there under the galley sink basin. I understand that it is possible that the gray water coming in from the shower sump MAY (or may not) come up into the galley sink if there is enough flow/force, but I still want to be able to try this. My set up is exactly as you have shown in your drawings and works perfectly
I have never experienced the grey water from the shower heads hand basin bypassing up into the galley sink

Why do you guys have grey water tanks? Are there regulations that require them where you are?
