one up is enough to do and it's well constrained. Lord help you if you're running with the canoe. The stern wave following along can be enough to swamp you if you've got to come up into the wind
at all (says she who was in such a canoe running in 20 kts one day and wondering how she was going to get off that run before hitting shore.)
Maybe safer ashore if it is a beach? They can get scary.
